1. Paella Is a Lunch Dish, Never Dinner

In Spain, rice is considered a heavy carbohydrate that takes hours to digest. Spaniards eat paella exclusively during the main afternoon meal between 14:00 and 16:00, especially on Thursdays or Sunday family gatherings. If a restaurant actively advertises and serves paella at 21:30 along a tourist boulevard, it is catering exclusively to foreigners and almost certainly using pre-cooked, frozen rice mixtures.

2. Traditional Valencian Paella Contains No Seafood

The original, authentic Paella Valenciana originated among agricultural field workers and contains:

  • Short-grain Bomba rice
  • Chicken and rabbit (sometimes snails)
  • Green flat beans (bajoqueta) and large white lima beans (garrofó)
  • Rosemary and saffron Seafood paella (paella de marisco) is a modern coastal variation, but mixing chorizo into seafood paella is considered a culinary crime in Spain.

3. How to Spot Authentic Preparation

  • Real paella is cooked in a wide, shallow steel pan and takes at least 25 to 35 minutes to prepare from scratch. If your rice arrives 8 minutes after ordering, it was reheated in a microwave.
  • Look for the Socarrat: the caramelized, slightly crispy layer of toasted rice on the bottom of the pan, which is prized by Spanish diners.
