The World's Greatest Beer Culture
Czechs consume more beer per capita than any nation on earth (averaging roughly 140 liters per person annually). Traditional Czech pub culture is built on fresh, unpasteurized pilsner lagers served from temperature-controlled tanks at modest prices (typically 50 to 65 CZK / €2.00 to €2.70 for a half-liter).
The Four Official Pouring Styles
In traditional Czech tank pubs (like the Lokál chain), beer is poured from a ball-tap faucet designed to create wet, creamy microfoam:
- Hladinka (Standard Pour): Roughly three fingers of dense, creamy foam over golden lager. The classic balanced pour.
- Šnyt (The Small Measure): Two fingers of beer, three fingers of foam, and one finger of empty glass. Historically tapped for bartenders to sample the keg or for a light final drink before leaving.
- Mlíko (The Milk Pour): A glass filled almost entirely with sweet, silky white foam. Drunk quickly before the foam settles into liquid.
- Čochtan (Neat / No Foam): Pure liquid with zero head. Provides maximum carbonation and bitterness, but is rarely ordered by locals.
The Coaster Tally System
When you sit down in a traditional Czech pivnica, the server places a paper coaster and a small slip of paper (lístek) on your table. Every time a fresh beer is dropped, the server marks a small pencil slash on the paper.
- The Rule: When you are finished and want no more beer, place your paper coaster on top of your empty glass. Leaving an empty glass uncovered signals the server to automatically drop another fresh pint.
