Discovering Lyon’s Traditional Bouchons

Lyon’s historic bouchons originated as working-class taverns serving hearty, nose-to-tail dishes to silk weavers. Today, tourist imitations abound.

The Certification Label to Look For

Look on the restaurant door for the round plaque depicting puppet character Gnafron with the words: "Authentique Bouchon Lyonnais" (certified by the Lyon Chamber of Commerce). Only about 25 restaurants meet the strict standards for homemade preparation and local sourcing.

Classic Dishes to Order

  • Quenelle de Brochet: Delicate pike fish dumpling baked in rich crayfish cream sauce (Sauce Nantua).
  • Salade Lyonnaise: Frisee lettuce with hot bacon lardons, croutons, and a soft-poached egg.
  • Cervelle de Canut: Whipped fresh cheese seasoned with herbs, shallots, garlic, and olive oil.
